I was at a get together over the weekend and the hosts served one of the best turkey burger recipes I have ever had. Over the years I have tried adding different ingredients in hopes of creating a burger that is moist even when grilled. That task has proven to be quite a challenge. I never could get it quite right.
One of the mistakes I made was to add bread crumbs and egg like you do when you make a meatloaf. I thought turkey meat would need a binder of some sort because it is so lean and kind of fragile. But boy I was wrong. The burgers were dense and dry instead of tender and moist.
After tasting my friend's burgers I realized that when working with ground turkey, you need to add some kind of vegetable. In this case, mushrooms and onion is what locks in the moisture and creates a delectable burger.
This same concept is true when making a turkey meatloaf. Add a vegetable, preferably one with a lot of liquid like mushrooms or zuchinni. Cheese helps alot too.

Spray cooking oil on either grill or broiler pan and preheat. Mix all turkey burger ingredients and form 4 patties. Grill or broil 10 minutes on each side.
If you can find them, serve these turkey burgers on pretzel buns like the one shown above. They are really moist and kind of chewy like Italian bread.
