Preheat oven to 350 degrees. Combine flour, oats, baking soda, cinnamon, and salt; set aside.
Cream butter and gradually add sugars, beating until fluffy. Add egg and vanilla and mix well.
Alternate additions of dry ingredients and pumpkin, mixing well between additions. Stir in chocolate chips.
Drop 2-3 tablespoons of cookie dough for each cookie making sure all are the same size so they will cook evenly. Bake for 20-25 minutes.
After cookies are cool, decorate with icing and assorted candies, raisins, and/or nuts, if desired.
