I remember the Salerno company used to make Mystic Mint Cookies and my sister and I loved them. I have not been able to find them in stores for years so I think they discontinued them.
Although this recipe for cookies is not exactly the same, the flavors are all there. Rich and creamy chocolate mixed with peppermint. Yum!
Heat oven to 375 degrees. Mix sugar, butter, vanilla, egg and unsweetened chocolate. Stir in flour and salt.
Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Flatten each cookie with fingertips. Bake until set, about 8 minutes. Remove to cooling racks and cool completely.
Mix all frosting ingredients until smooth and of spreading consistency.
Simmer all drizzle ingredients over low heat. Stir constantly until butter and chocolate are melted.
Spread peppermint frosting over cooled cookies then drizzle each with chocolate mixture. Leave on counter for 2-3 hours until frosting is set.
This easy dessert recipe will have your guests coming back for seconds. Double the batch to be on the safe side.
