1-16oz can refried beans
1-8oz carton sour cream
1/2 pkg taco seasoning
2 cups colby jack cheese, grated
1 Lime, nuked 15 sec in microwave, cut in half
*Choose Some Toppings*
1/4 C sliced black olives
1/2 lb cherry tomatoes, quartered
1 ripe avocado, diced
2 tbsp cilantro
2 green onions, sliced
2 tbsp red onion, diced
1/2 C red pepper, diced
1/2 C yellow pepper, diced
1/2 C jicama, diced
1/4 C jalapenos (fresh or canned) sliced
1/2 C diced mango
1/2 C crushed pineapple, drained WELL
** #1: olives, tomatoes, avocado & cilantro. #2: red pepper, mango, jicama, cilantro, avocado, red onion, fresh jalapeno**
Spread the refried beans on a serving plate. Mix the taco seasoning and sour cream, spread over the beans. Sprinkle the cheese over the sour cream.
Mix the toppings in a small bowl. Squeeze the lime halves, pulp AND juice over the toppings. Toss to coat. Spoon the mixture over the cheese. Serve with Fritos Scoops or your favorite corn chips.
