I am a fan of casual get togethers but once in a while I need some main course recipes for more formal parties, like Mothers Day Brunch or New Years Eve.
When I do, my go-to list is the one you see below. It is short and sweet and has some of my favorite easy recipes.
But before we get to those, I am featuring a main dish salad recipe that I use for casual affairs like graduation parties. When you read the recipe, you will see how the combination of ingredients results in a salad that is elegant enough for company.
Even if you are just looking for lowfat chicken recipes for your family, consider this salad. All you need is a great loaf of crusty bread and you have a very satisfying main meal food choice.
This Chicken Salad With Asparagus is not your average salad. It is worthy of begin called one or our main course recipes because it is very hearty and would be perfect for your more casual affairs like a ladies luncheon or a casual dinner party.
The dressing is made with sun-dried tomatoes and garlic and is jam-packed with flavor. Somebody always asked me for this easy main course recipe.
Mix in blender or food processor until smooth.
Saute asparagus in oil until crisp-tender, about 4 minutes. Mix with dressing and let cool.
Add in basil and chicken and top with goat cheese and pine nuts. Serves 4.
NOTE: For a great pasta salad, add 8 oz. of cooked rigatoni or other pasta and double the dressing. Serve either hot or cold for a satisfying main course choice.
