Chicken Marsala With Dilled Carrots
I am always looking for easy chicken dinners to make at home. I order Chicken Marsala in restaurants every chance I get so I wanted to find a recipe that I could easily make at home.
I made this Chicken Marsala recipe over the weekend and my family loved it. Closest to restaurant quality I have ever made.
- 4 cups mushrooms, any combination
- 4 boneless, skinless chicken breast halves
- 1 cup heavy cream
- 1 cup sweet Marsala wine
- 2 cloves garlic
- 3 tablespoons butter
- 2 tablespoons olive oil
- Kosher salt and black pepper
- Parsley for garnish
Slice mushrooms and mince garlic. Saute mushrooms and garlic in butter. Season with salt and pepper and remove from skillet.
Season both sides of chicken with salt and pepper. Heat oil in skillet and cook chicken until lightly browned. Remove from skillet.
Deglaze pan with wine (careful!). Slowly add heavy cream whisking continually to avoid curdling the cream. Reduce by half, about 10 minutes.
To serve, plate the chicken, top with mushrooms and drizzle Marsala sauce over and around chicken. Garnish with parsley. Serves 4.
I like to serve it with my
Grandma's Dilled Carrots and a side of buttered pasta.
