This Cranberry Wild Rice Casserole came about when I was trying to come up with a new Thanksgiving side dish recipe. It also works well as a Thanksgiving dressing recipe, inside or outside the bird.
This is a great recipe for parties because you can easily double or triple the recipe for a crowd.
In a small saute pan, lightly toast almonds on medium heat, stirring constantly. Watch closely because it only takes about 2 minutes.
Prepare wild rice as directed on the box, adding the vinegar to the liquid. In the last minute of cooking, throw in the cranberries to plump them up. Just before serving add the almonds.
