This Banana Bread With Mixins recipe has been in our family for years. You make the basic recipe and then you add in whatever mixins your family likes. We like a combination of bananas, chocolate and butterscotch chips served with honey butter.
My daughter and her friends love this recipe made as muffins too. I guess it is easier to grab them when you are on the run like college students are.
Either way, you will love this banana bread recipe. It is so moist and flavorful.
Preheat the oven to 350 degrees. Grease two 9x5 inch loaf pans or 6 mini loaf tins. Cream together butter and sugar until light in color. Add eggs one at a time until well combined.
Mix together flour, baking soda, baking powder, salt and spices (if desired). Reserve 2 tablespoons and then gradually add remaining dry mixture to wet mixture until well combined. Gently stir in mashed bananas.
To keep the mixins from sinking to the bottom of the loaves when baking, toss them in the reserved flour mixture before gently stirring into the batter. Try using 2 or 3 different mixins together, like dates and mini chocolate chips.
Divide the batter evenly between the 2 prepared pans or mini loaf tins. Bake in preheated oven, 60 to 70 minutes for large loaves, 35 to 45 minutes for mini loaves. The top of the loaves should spring back when lightly pressed.
This bread is so good served with honey butter. To make it, take 1/2 stick of softened butter and about 2 tablespoons of honey (or more to taste) and blend together.
Yield: 2 large loaves or 6 minis.
