Roasted Pumpkin Seed Recipes
I absolutely love nuts in salads and usually use sunflower seeds, pecans or cashews. Recently I was looking for a healthier alternative and by accident, I stumbled upon pumpkin seeds.
I researched their nutritional information and was quite surprised. Not only are pumpkin seeds a rich source of minerals, protein and monounsaturated fat, but they also help reduce inflammation in the body and have a component which lowers cholesterol.
Now I keep them in the refrigerator and add them to recipes whenever I can. In addition to using them in salads, I add them to my Favorite Guacamole Recipe for an unusual flavor and nutty crunch.
Whether you roast your own pumpkin seeds or buy them, try substituting them in recipes that call for nuts and see what you think.
