During the past couple of weeks, we went to some holiday parties and entertained a bit at home which has given me a chance to try out some new recipes.
The first one was a entree recipe, fit for the finest dinner party. I hesitate to even call it a recipe because it only has 3 ingredients. The Crock Pot was really the workhorse in this show.
Have you ever used a pot roast seasoning mix? Before last week, the only seasoning mix I ever used was taco seasoning. I am surprised to say that I am now a fan of McCormick Savory Pot Roast Seasoning.
Here's what I did. First I placed a 2 pound sirloin tip roast (any roast will do though) into a Crock Pot set on low then mixed the seasoning with one cup of water and poured it over the roast.
Next I added one can of regular cola, put the lid on the crock and cooked it for 7 hours without lifting the lid a single time (that part is important).
The roast was fall-apart tender which you would expect from a Crock Pot recipe. What I didn't expect was the flavor of the sauce. I served it over Smashed Potatoes (skin-on new potatoes, butter, sour cream, garlic powder and green onions left chunky) and WOW did we love that meal.
Note: The sauce was the consistency of Au Jus so if you like it thicker, you'll have to thicken it.
I also made a Martha Stewart recipe for Chicken Mole, which is one of my favorite dishes. I've been trying different recipes so I can make it at home and I think this one is my favorite so far, perfect for a Mexican Fiesta theme party. I changed Martha's slightly and added the recipe and photos here:
